MUTTON MADRASI Recipe
INGREDIENTS
100 gm mutton, cut into pieces
1 cup madras onions, peeled
2 tomatoes, chopped
½ cup curd
4 tsp lime juice
1 tsp ginger-garlic-green chilli paste
¼ tsp green cardamom powder
½ cup mixture of coriander seeds, cumin seeds, poppy seeds, black
pepper, nutmeg, mace, cloves
¼ tsp salt
1 tsp oil
METHOD
1. Roast and powder the seeds, black pepper, mace and cloves.
2. Mix the curd, lime juice, masala paste, cardamom powder and the roasted
powder, and salt till well combined. Marinate the mutton pieces in it
for a few hours.
3. Heat oil in a 2 litre cooker and stir in the peeled madras onions,
and fry.
4. Stir in the chopped tomatoes and the marinated mutton pieces and pressure
cook.
5. Garnish it with peeled madras onions.
