VEGETABLES IN CURD Recipe
INGREDIENTS
1 drumstick, cut into 1 inch pieces
6-8 1 inch ashgourd pieces
6-8 french beans, cut into 1 inch pieces
1 carrot, peeled and cut into 1 inch strips
1 cup curd
1 tsp freshly grated coconut
2 tsp coriander leaves
2 flakes garlic
½ inch ginger
2 green chillis
¼ tsp salt
For Seasoning
½ tsp ghee
½ tsp mustard and cumin seeds
1 tsp curry leaves
METHOD
1. Cook all the vegetables with half the quantity of salt.
2. Grind coconut, coriander leaves, garlic, ginger and chilli to a fine
paste.
3. Heat ghee in a pan and fry the seasoning ingredients.
4. Add the ground paste and fry.
5. Stir in the cooked vegetables, curd and the remaining amount of salt.
Cook for 5 minutes.
6. Serve with chapatti or rice.
