CARROT CURRY Recipe
INGREDIENTS
1 cup carrot, chopped or grated
1 tsp moong dal
2 tsp coriander leaves, chopped
¼ tsp salt
1 tsp lime juice
For Seasoning
1 tsp oil
½ tsp mustard and cumin seeds
1 tsp curry leaves
2 green chillis, minced
½ tsp ginger, grated
METHOD
1. Heat oil in a pan and fry the seasoning ingredients.
2. Add carrot, dal, coriander leaves and salt along with little quantity
of water, mix the contents thoroughly, cover the pan with a lid and cook
till the contents are tender and dry.
3. When a vegetable is slightly cool, add lime juice and mix the contents
thoroughly.
4. Serve with rice or chapatti or as a filling for a sandwich.
