BRINJAL CURRY Recipe
INGREDIENTS
2 medium sized brinjals, cut into thin strips
2 small onions, sliced
½ tsp ginger-garlic-green chilli paste
¼ tsp salt
2 tsp coriander leaves, chopped
For Seasoning
2 tsp oil
½ tsp chana dal
½ tsp urad dal
½ tsp cumin and mustard seeds
¼ tsp fenugreek seeds
METHOD
1. Heat oil in a pan and fry the seasoning ingredients.
2. Add the masala paste and fry.
3. Add brinjal, onion, coriander leaves, salt and sprinkle a little water
over it. Mix the contents thoroughly, cover the pan with the lid and cook
with occasional stirring till the contents are tender and dry.
4. Serve hot with rice or chapatti.
