MUTTON PULLAO Recipe
INGREDIENTS
1 cup basmati rice
100 gm mutton, cut into small pieces
½ tsp garam masala powder
2 bay leaves
1 cup curd
¼ tsp green cardamom powder
1 tsp ginger-garlic-green chilli paste
2 onions, finely chopped
¼ tsp salt
2 tsp oil
METHOD
1. Wash and soak rice for 1 hour. Cook till half done.
2. Mix the curd, garam masala powder, green cardamom powder, masala paste
and half the quantity of salt till well combined.
3. Marinate the mutton pieces in the above mixture for 2 hours.
4. Heat 1 tsp oil in a 2 litre cooker and fry the onions.
5. Stir in the mutton mixture and pressure cook.
6. Heat the remaining quantity of oil in a pan and fry the bay leaves.
7. Stir in the mutton mixture, half cooked rice and the remaining quantity
of salt, cover the pan with the lid and cook on a slow fire stirring occasionally
till the rice is tender and the contents dry.
8. Garnish mutton pullao with tomato rings and serve hot.
