SAVOURY SEMOLINA
INGREDIENTS
1 cup semolina
1 cup sour curd
¼ tsp salt
1 tsp coriander leaves, chopped
For Seasoning
1 tsp sesame (till) oil
¼ tsp mustard seeds
2 green chillis, minced
½ tsp ginger, grated
1 tsp curry leaves
For Garnishing
2 tsp onion chopped
METHOD
1. Roast the semolina till the raw smell disappears.
2. When the semolina is cool, stir in the curd, salt and the coriander
leaves. Mix the contents thoroughly and leave the semolina batter aside
for 1 hour.
3. Heat oil and fry the seasoning ingredients. Pour it over the semolina
batter. Mix the batter thoroughly.
4. Pour the batter into idli moulds and steam for 5 minutes.
5. Serve hot, garnished with chopped onion and any chutney or sambhar
spooned over it.
